Rosé wine production: how gets it the characteristic pink colour?

There are several methods of producing rosé wine, each of which creates a very distinct wine.

  • In the pressing method, the red wine grapes are pressed without prior mashing – just like in white wine production – and the must is fermented in the style of white wine.

  • In the maceration method, the crushed grapes (grape mash) rest for a while so that the colour and flavour leaches out from the skin. Unlike red wine, the grape mash for rosé rests only for a few hours so that the must colours only slightly.

  • In the saignée method, the grapes are mashed and after a few hours part of the must is drained off from the grape mash container. This light red-coloured must is processed to make rosé, while the remaining must in the grape mash becomes a robust red wine.

The grapes used for making the rosé wine have a decisive influence on its taste. France has been producing outstanding rosé wines since time immemorial. However, in recent years, other traditional red wine countries like Italy and Spain have also had very good rosés to offer – and even Germany should no longer have any fear of international comparison when it comes to production of rosé wines.
